Ingredients

Scale

Dough Ingredients

  • 2 ½ cups All-Purpose Flour
  • 1 cup Unsalted Butter, softened
  • ½ cup Granulated Sugar
  • ½ cup Brown Sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Nutmeg
  • 1 teaspoon Vanilla Extract

Apple Filling Ingredients

  • 2 cups Fresh Apples, peeled, cored, and finely diced
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Nutmeg
  • 2 tablespoons Brown Sugar
  • ½ teaspoon Vanilla Extract

Instructions

  1. Prepare the Apple Filling: Peel, core, and finely dice the fresh apples. In a small saucepan, sauté the apples with a sprinkle of cinnamon, nutmeg, brown sugar, and a splash of vanilla extract until tender and fragrant. Set the filling aside to cool completely.
  2. Make the Cookie Dough: In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture until just combined.
  3. Assemble the Cookies: Take a small portion of dough and flatten it in your palm. Place a spoonful of the cooled apple filling in the center, then wrap the dough around the filling, sealing it completely. Roll gently into a ball and place on a baking sheet lined with parchment paper.
  4. Bake to Perfection: Preheat your oven to 350°F (175°C). Bake the cookies for 12 to 15 minutes or until the edges turn golden brown. Allow them to cool slightly on the baking sheet before transferring to a wire rack.

Notes

  • Choose tart apples like Granny Smith for balanced sweetness and good texture.
  • Dice apples finely to keep the filling moist and evenly distributed.
  • Seal the dough well around the filling to prevent leakage during baking.
  • Chill the dough for 30 minutes before assembly to make handling easier.
  • Keep an eye on baking time to avoid drying out the cookies; remove when edges are golden brown.
