  • 2 ½ cups all-purpose flour

  • 6 to 7 crisp apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • ¾ cup granulated sugar (adjust to taste)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces (for dotting filling)

Instructions

  1. Prepare the crust: Combine cold unsalted butter and all-purpose flour with salt in a bowl, mixing until the mixture becomes crumbly. Slowly add cold water, one tablespoon at a time, until the dough forms. Shape into a ball, flatten into a disk, wrap in plastic, and chill in the refrigerator for at least 30 minutes to ensure a tender and flaky crust.
  2. Make the filling: Peel, core, and slice the apples evenly. In a large bowl, toss apple slices with sugar, cinnamon, nutmeg, flour, and a pinch of salt until the mixture is well-coated. This ensures the filling thickens nicely while baking and balances sweetness and tartness.
  3. Assemble the pie: Roll out half of the chilled dough on a lightly floured surface and line a 9-inch pie dish. Fill with the apple mixture, then dot evenly with the small pieces of butter. Roll out the remaining dough and place over the filling. Seal the edges by crimping and cut several slits in the top crust to allow steam to escape during baking.
  4. Bake to perfection: Preheat the oven to 425°F (220°C). Place the assembled pie on a lined baking sheet to catch any drips. Bake for 15 minutes at 425°F, then reduce the temperature to 350°F (175°C) and continue baking for an additional 40 minutes or until the crust is golden brown and the filling is bubbly.
  5. Cool and enjoy: Let the apple pie cool for at least one hour on a wire rack so the filling sets properly. Serve warm for the best flavor and texture experience.
