  • 2 cups cherry tomatoes (about 300 g)
  • 3 tablespoons olive oil
  • 34 garlic cloves, whole and unpeeled
  • 12 oz (340 g) pasta (penne or rigatoni preferred)
  • 1/4 cup fresh basil leaves, torn
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Place the block of feta in the center of a baking dish and arrange the cherry tomatoes around it. Drizzle everything with olive oil, then sprinkle with salt, pepper, and add the whole garlic cloves.
  2. Bake the Feta and Tomatoes: Bake the feta and tomatoes for 35-40 minutes, until the tomatoes are bursting and softened and the feta has puffed up and turned golden on top. This roasting melds and intensifies the flavors.
  3. Cook the Pasta: While baking, cook your chosen pasta in salted boiling water according to package instructions until al dente. Reserve one cup of pasta cooking water before draining the pasta.
  4. Combine and Mix: Remove the feta and roasted tomatoes from the oven. Using a fork or spoon, mash the feta and softened tomatoes together to form a creamy sauce. Add the hot pasta and a splash of reserved pasta water to loosen the sauce, stirring until the pasta is fully coated.
  5. Garnish and Serve: Tear fresh basil leaves and sprinkle over the pasta. Optionally, drizzle with additional olive oil and season with freshly cracked black pepper. Serve immediately while warm and creamy.
