Main Ingredients
- 1 block feta cheese (about 7 oz / 200 g)
- 2 cups cherry tomatoes (about 300 g)
- 3 tablespoons olive oil
- 3–4 garlic cloves, whole and unpeeled
- 12 oz (340 g) pasta (penne or rigatoni preferred)
- 1/4 cup fresh basil leaves, torn
- Salt to taste
- Freshly ground black pepper to taste
- Preheat and Prepare: Preheat your oven to 400°F (200°C). Place the block of feta in the center of a baking dish and arrange the cherry tomatoes around it. Drizzle everything with olive oil, then sprinkle with salt, pepper, and add the whole garlic cloves.
- Bake the Feta and Tomatoes: Bake the feta and tomatoes for 35-40 minutes, until the tomatoes are bursting and softened and the feta has puffed up and turned golden on top. This roasting melds and intensifies the flavors.
- Cook the Pasta: While baking, cook your chosen pasta in salted boiling water according to package instructions until al dente. Reserve one cup of pasta cooking water before draining the pasta.
- Combine and Mix: Remove the feta and roasted tomatoes from the oven. Using a fork or spoon, mash the feta and softened tomatoes together to form a creamy sauce. Add the hot pasta and a splash of reserved pasta water to loosen the sauce, stirring until the pasta is fully coated.
- Garnish and Serve: Tear fresh basil leaves and sprinkle over the pasta. Optionally, drizzle with additional olive oil and season with freshly cracked black pepper. Serve immediately while warm and creamy.
Notes
- Use quality Greek feta in a block for authentic flavor and texture.
- Do not skip reserving pasta water; it helps create a silky sauce.
- Make sure to roast tomatoes until fully bursting to release their natural juices.
- Serve immediately for the best creamy texture and flavor.
- Try different tubular pasta like penne, rigatoni, fusilli, or farfalle for varied texture.
