Ingredients

Scale

Main Ingredients

  • 1 cup pumpkin puree (fresh preferably)
  • 3/4 cup all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 2 large eggs (or flax eggs for vegan version)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 2 tablespoons sugar or maple syrup (or honey/agave syrup as a substitute)
  • 1 teaspoon vanilla extract
  • 2 tablespoons olive oil or melted butter (or coconut oil/vegan margarine for vegan)

Optional Add-ins

  • 1/4 cup chopped nuts (optional)
  • 1/4 cup raisins (optional)
  • Additional mix-ins: dark chocolate chips, shredded coconut, dried cranberries (optional)

Instructions

  1. Step 1: Prepare the dry ingredients
In a large bowl, whisk together the all-purpose flour (or gluten-free blend), baking powder, cinnamon, nutmeg, and ginger until well combined to distribute the spices evenly.
  2. Step 2: Mix the wet ingredients
In a separate bowl, beat the eggs lightly with the pumpkin puree, sugar or maple syrup, vanilla extract, and melted butter or olive oil until the mixture is smooth and glossy.
  3. Step 3: Combine wet and dry mixtures
Slowly fold the dry ingredients into the wet mixture, stirring gently until just combined to avoid overmixing and to keep the fritters tender and light.
  4. Step 4: Add optional ingredients
If desired, gently fold in chopped nuts, raisins, or any other chosen mix-ins to add texture and bursts of flavor throughout the batter.
  5. Step 5: Shape and bake
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Drop spoonfuls of batter onto the sheet, flattening them slightly for even cooking. Bake for approximately 15–20 minutes or until fritters turn golden and are firm to the touch.
  6. Step 6: Cool and enjoy
Allow the fritters to cool slightly on a wire rack before serving. This helps maintain their crispy edges and moist centers, making them perfect for snacking.

Notes

  • Use fresh pumpkin puree when possible to enhance flavor and texture.
  • Avoid overmixing the batter to keep fritters light and fluffy.
  • Uniform sizing of fritters ensures even baking; use a cookie scoop if available.
  • Preheat and monitor oven temperature closely to avoid undercooked or overly dry fritters.
  • Cool fritters on a wire rack to maintain crispiness on all sides.
