Ingredients

Scale

Main Ingredients

  • 4 medium to large ripe tomatoes (firm but ripe, such as Roma or beefsteak)
  • 1 cup cooked rice or quinoa
  • 1/2 cup grated cheese (mozzarella, feta, or parmesan preferred)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons fresh herbs (basil, parsley, or oregano), chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Optional Add-ins

  • 1/2 cup chopped vegetables (e.g., zucchini, mushrooms, or bell peppers)
  • 1/2 cup cooked ground meat (turkey, beef, or other preferred protein)
  • Crushed red pepper flakes or chopped jalapeños for spice
  • Sun-dried tomatoes for Italian-style variation

Instructions

  1. Prepare the Tomatoes: Wash the tomatoes thoroughly. Slice off the tops and carefully scoop out the seeds and pulp without piercing the skin, creating a hollow cavity to hold the stuffing.
  2. Make the Stuffing: In a mixing bowl, combine cooked rice or quinoa with minced garlic, chopped onion, fresh herbs, grated cheese, olive oil, salt, and pepper. Stir in any optional add-ins such as chopped vegetables or cooked ground meat to enhance flavor and texture.
  3. Stuff the Tomatoes: Fill each hollowed-out tomato generously with the prepared stuffing mixture. Press the stuffing gently to pack it firmly, ensuring it holds together during baking.
  4. Bake Until Tender: Place the stuffed tomatoes upright in a baking dish. Drizzle a little olive oil over them and bake in a preheated oven at 375°F (190°C) for 25-30 minutes or until the tomatoes are tender and the filling is golden on top.
  5. Serve Warm: Let the tomatoes rest for a few minutes after baking to allow the flavors to meld. Serve warm as a comforting family meal, optionally garnished with fresh parsley or basil.

Notes

  • Choose medium to large tomatoes with sturdy skin to prevent collapsing during baking.
  • Do not overstuff the tomatoes to avoid overflow while baking.
  • Use fresh herbs for best aroma and flavor over dried herbs.
  • Let the tomatoes rest slightly after baking to let the filling set.
  • Try different cheeses such as feta, mozzarella, or parmesan for flavor variety.
