Ingredients

Scale

Wet Ingredients

  • 3 medium ripe bananas
  • 1/2 cup unsalted butter, melted or softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk or buttermilk

Dry Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Crumb Topping

  • 1/2 cup brown sugar
  • 3/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Prepare the Crumb Topping: Combine brown sugar, flour, cinnamon, and cold butter cut into small pieces in a bowl. Use your fingers or a pastry cutter to blend until the mixture forms coarse crumbs. Set aside to let the flavors meld.
  2. Mix the Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Add melted or softened butter, eggs, vanilla extract, and milk, whisking everything together until well combined.
  3. Combine Dry Ingredients: In a separate bowl, sift together flour, sugar, baking powder, baking soda, cinnamon, and salt. This step ensures even distribution for a consistent cake texture.
  4. Incorporate Dry and Wet Ingredients: Gradually add the dry mixture into the wet ingredients, stirring gently to form a thick batter. Avoid overmixing to keep your cake tender and light.
  5. Assemble and Bake: Pour half of the batter into a greased or parchment-lined 9×9-inch baking pan. Sprinkle half of the crumb topping evenly over it. Add the remaining batter on top and finish with the remaining crumb topping. Bake at 350°F (175°C) for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Notes

  • Use Very Ripe Bananas: The riper, the better for sweetness and moisture.
  • Keep Butter Cold for Topping: Cold butter creates the best crumbly texture.
  • Don’t Overmix the Batter: Stir gently to avoid a dense cake.
  • Check Oven Temperature: An accurate oven thermometer ensures the cake bakes evenly.
  • Let Cake Cool Before Slicing: This helps the crumb topping set and prevents crumbling during cutting.
