Ingredients

Scale

Beef

  • 200g thinly sliced sirloin or flank steak

Rice

  • 3 cups cooked rice (preferably day-old or cooled freshly cooked rice)

Vegetables

  • 1/2 cup diced carrots
  • 1/2 cup peas (fresh or frozen)
  • 1/2 cup diced bell peppers
  • 3 green onions, chopped

Aromatics

  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced

Eggs

  • 2 large eggs, lightly beaten

Seasonings

  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sesame oil
  • Optional: 1/4 tsp chili flakes
  • Cooking oil (vegetable or canola) for frying

Instructions

  1. Prep Your Ingredients: Slice the beef thinly against the grain. Chop all vegetables into bite-sized pieces. Lightly whisk the eggs. Ensure the rice is cooked and cooled to prevent clumping.
  2. Cook the Beef: Heat a large wok or skillet over medium-high heat and add a small amount of cooking oil. Quickly cook the beef until browned but still tender. Remove and set aside.
  3. Sauté the Vegetables: In the same pan, add garlic and ginger and sauté briefly until fragrant. Add diced carrots, peas, and bell peppers, cooking until softened but still retaining a slight crunch.
  4. Scramble the Eggs: Push the vegetables to one side of the pan, pour the whisked eggs into the empty side, and scramble until just set. Mix the eggs and vegetables together.
  5. Add Rice and Combine: Add the cooked rice to the pan, breaking up any clumps. Stir thoroughly to combine the rice evenly with the eggs and vegetables.
  6. Season and Finish: Return the cooked beef to the pan. Pour in the soy sauce and optional chili flakes, tossing everything together evenly. Drizzle with sesame oil for a fragrant, nutty finish, and toss once more before serving.

Notes

  • Use day-old rice for the best texture as it fries better and avoids mushiness.
  • Cook over high heat to achieve a slight char and smoky flavor.
  • Prepare and chop all ingredients before starting to ensure even cooking.
  • Avoid overcrowding the pan; cook in batches if necessary to prevent steaming.
  • Add soy sauce gradually to control saltiness and flavor balance.
