  • 68 tostada shells (corn, gluten-free if desired)

Toppings

  • 1 cup chopped tomatoes
  • 1 ripe avocado, diced or ½ cup guacamole
  • ¼ cup fresh cilantro, chopped
  • Optional: ¼ cup crumbled queso fresco or shredded cheddar cheese
  • Optional: sliced jalapeño or hot sauce, to taste

Instructions

  1. Prepare the black bean filling: Heat oil in a skillet over medium heat. Sauté minced onion and garlic until fragrant and translucent. Add rinsed black beans, cumin, chili powder, salt, and pepper. Stir to combine, gently mashing some beans to create a creamy yet chunky texture. Finish by squeezing fresh lime juice into the mixture and stir well.
  2. Warm the tostada shells: Preheat oven to 375°F (190°C) or heat a skillet. Warm the tostada shells for 3-5 minutes to make them extra crispy and prevent sogginess once topped.
  3. Assemble your tostadas: Spread a generous layer of the black bean mixture evenly over each tostada shell. Top with chopped tomatoes, diced avocado or guacamole, and sprinkle fresh cilantro on top. Add optional cheese and jalapeño slices if desired.
  4. Serve and enjoy: Serve the tostadas immediately to maintain crispness. Accompany with lime wedges and your favorite hot sauce for an extra zing.
