Ingredients

Scale

Main Ingredients

  • 68 slices of stale white bread
  • 4 tablespoons butter, softened for spreading
  • 3 large eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon or nutmeg (optional)
  • 1/2 cup raisins or mixed dried fruit (optional)

Instructions

  1. Prepare the bread: Trim the crusts off the white bread slices and spread each slice generously with butter. Cut the buttered bread into triangles or squares that will fit neatly into your baking dish.
  2. Layer the bread: Arrange a layer of buttered bread pieces in your buttered baking dish. If using, sprinkle raisins or dried fruit evenly between layers. Repeat layering until the dish is filled.
  3. Make the custard: In a large bowl, whisk together the eggs, sugar, vanilla extract, milk, cream, and your chosen spices until smooth and well combined. This custard mixture will make the pudding creamy and tender.
  4. Combine and soak: Pour the custard evenly over the layered bread so that each piece is well soaked. Allow the pudding to sit for at least 20 minutes to let the bread absorb the custard fully.
  5. Bake until golden: Preheat your oven to 350°F (175°C). Place the dish in the oven and bake for 35-45 minutes until the pudding is puffed, golden on top, and the custard is just set.

Notes

  • Use day-old bread to ensure the bread absorbs the custard without becoming soggy.
  • Butter every slice to create a crispy, flavorful crust and the perfect texture contrast.
  • Allow the custard to soak fully into the bread for a creamy, cohesive pudding.
  • If the pudding browns too quickly, tent with foil to prevent burning.
  • Let the pudding rest and cool slightly before serving for better sliceability and flavor melding.
