Instructions

  1. Prepare the Cauliflower: Wash and dry a medium head of cauliflower. Pulse in a food processor until rice-sized pieces form. Spread the riced cauliflower on a kitchen towel and press to remove excess moisture to prevent sogginess during cooking.
  2. Sauté Aromatics: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant but not browned. These aromatics are the flavor base of the dish.
  3. Cook the Vegetables: Add diced carrots, peas, and bell peppers to the skillet. Stir-fry for 3-4 minutes until vegetables begin to soften but stay vibrant and crisp to maintain texture.
  4. Add Cauliflower and Sauce: Mix the riced cauliflower into the skillet and stir well to combine. Pour in 2 tablespoons of soy sauce or tamari, cooking for 5-7 minutes as the cauliflower softens slightly and absorbs the flavors.
  5. Incorporate Eggs and Protein: Push the cauliflower mixture to one side of the pan. Pour in the whisked eggs on the cleared side and scramble until just cooked. Then combine the eggs through the cauliflower rice. Fold in any cooked chicken, shrimp, or tofu if using.
  6. Finish with Green Onions and Serve: Turn off heat and stir in chopped green onions for freshness and color. Taste and adjust seasoning if needed. Serve immediately with optional garnishes or sides.
