Ingredients

Scale

Dough Ingredients

  • 2 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 tsp yeast or 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp sugar (optional, if using yeast)
  • 3/4 cup warm milk or yogurt
  • 2 tbsp melted butter or oil

Cheese Filling

  • 1 to 1 1/2 cups shredded or crumbled cheese (mozzarella, cheddar, feta, paneer, or vegan cheese alternative)
  • Optional: Fresh herbs like cilantro, parsley, dill, basil, oregano, or thyme to taste
  • Optional spices: cumin, chili flakes, smoked paprika (to taste)
  • Optional extras: sautéed mushrooms, spinach, caramelized onions

For Cooking & Serving

  • Butter or oil for greasing the skillet
  • Optional garnishes: melted butter or garlic butter, freshly chopped herbs (cilantro, parsley)

Instructions

  1. Prepare the Dough: Mix flour with yeast or baking powder, salt, and sugar if using yeast. Add warm milk or yogurt and melted butter or oil. Stir to form a soft dough, then knead gently until smooth. Cover and let rest for 30-45 minutes to relax or rise slightly.
  2. Prepare the Cheese Filling: Grate or crumble your chosen cheeses. Mix with any desired herbs or spices and optional extras. Keep filling ready for stuffing.
  3. Shape and Fill: Divide the rested dough into small balls. Roll each ball into a flat circle, place a generous amount of cheese mixture in the center, fold the edges over to seal well, then gently roll again into a flat, stuffed circle.
  4. Cook the Flatbread: Heat a lightly greased skillet or griddle over medium heat. Cook each flatbread for 2-3 minutes on each side until golden brown spots appear and the cheese melts inside.
  5. Serve Warm: Remove from heat and serve immediately, optionally garnished with fresh herbs or brushed with melted/garlic butter for a delicious gooey experience.

Notes

  • Use warm liquids to help activate yeast effectively for soft dough.
  • Do not overfill with cheese to prevent flatbread from breaking during cooking.
  • Press edges firmly to seal and avoid cheese leakage.
  • Cook on medium heat to avoid burning while melting the cheese thoroughly.
  • Let dough balls rest after shaping to improve texture and ease of rolling.
