Cheese Tortellini
- 12 oz fresh or store-bought cheese tortellini
Vegetables
- 1 red, yellow, or orange bell pepper, chopped
- 1 medium zucchini, chopped
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
Other Ingredients
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- Prepare the Veggies: Wash and chop the bell peppers, zucchini, and cherry tomatoes into bite-sized pieces. Mince the garlic finely to release its flavor when sautéed.
- Cook the Tortellini: Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant. Add bell peppers and zucchini, cooking until tender but still crisp, about 4-5 minutes. Add cherry tomatoes last and cook just until softened, about 2 minutes.
- Combine Tortellini and Veggies: Add the drained tortellini to the skillet with vegetables. Gently toss everything together, adding a splash of reserved pasta water to help coat the pasta evenly.
- Season and Finish: Season with salt, pepper, and chopped fresh basil. Remove from heat, sprinkle generously with grated Parmesan cheese, and give one last gentle toss before serving.
Notes
- Use fresh ingredients whenever possible for the best flavor and texture.
- Do not overcook the tortellini; keep it al dente for the perfect bite.
- Reserve some pasta cooking water to loosen the sauce and help it coat the pasta.
- Add garlic early and fresh herbs at the end to maintain their flavors.
- For extra texture, add toasted pine nuts or walnuts just before serving.
