  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Prepare the Veggies: Wash and chop the bell peppers, zucchini, and cherry tomatoes into bite-sized pieces. Mince the garlic finely to release its flavor when sautéed.
  2. Cook the Tortellini: Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  3. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant. Add bell peppers and zucchini, cooking until tender but still crisp, about 4-5 minutes. Add cherry tomatoes last and cook just until softened, about 2 minutes.
  4. Combine Tortellini and Veggies: Add the drained tortellini to the skillet with vegetables. Gently toss everything together, adding a splash of reserved pasta water to help coat the pasta evenly.
  5. Season and Finish: Season with salt, pepper, and chopped fresh basil. Remove from heat, sprinkle generously with grated Parmesan cheese, and give one last gentle toss before serving.
