Instructions

  1. Prepare the chicken and veggies: Slice the chicken into thin strips. Chop the bell peppers and onions. Heat olive oil in a skillet over medium heat. Sauté the chicken with fajita seasoning until cooked through and slightly browned. Remove the chicken, then sauté the peppers and onions until tender-crisp, seasoning with salt and pepper to taste.
  2. Assemble the casserole layers: Preheat the oven to 375°F (190°C). Grease a baking dish. Layer tortillas to cover the bottom of the dish, then add a layer of cooked chicken, followed by sautéed vegetables, a dollop of sour cream, and a generous sprinkle of shredded cheese. Repeat the layers until ingredients are used, finishing with a top layer of cheese to create a golden crust.
  3. Bake it to cheesy perfection: Cover the casserole loosely with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden. Allow the casserole to rest for a few minutes before serving to let layers set.
