Ingredients

Scale

Main Ingredients

  • 810 Flour Tortillas (soft and pliable)
  • 2 cups Shredded Mozzarella Cheese
  • 1 ½ cups Shredded Cheddar Cheese
  • 1 ½ cups Pizza Sauce
  • 2 cups Cooked Chicken or Ground Beef (seasoned)
  • 1 cup Bell Peppers (diced)
  • 1 cup Onions (diced)
  • 1 tablespoon Italian Seasoning
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Prep the Filling: Heat olive oil in a skillet over medium heat. Sauté diced onions and bell peppers until tender, about 5 minutes. Add cooked chicken or ground beef, then season with Italian seasoning, salt, and pepper. Stir in half of the pizza sauce and cook together for another 5 minutes to allow flavors to meld.
  2. Assemble the Layers: Grease a baking dish lightly. Spread a thin layer of pizza sauce on the bottom. Place one flour tortilla on top, spoon evenly the meat and veggie filling over it, then sprinkle generously with shredded mozzarella and cheddar cheeses. Repeat the layering process with remaining tortillas, filling, and cheeses, finishing with a final layer of shredded cheese on top.
  3. Bake to Perfection: Preheat your oven to 375°F (190°C). Place the assembled dish in the oven uncovered and bake for 25-30 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
  4. Rest and Serve: Remove the bake from the oven and allow it to rest for 5-10 minutes before slicing. This helps the layers set and makes serving easier.

Notes

  • Use freshly shredded cheese instead of pre-shredded for better melting and texture.
  • Avoid overfilling tortillas to prevent sogginess and ensure the bake holds its shape.
  • Drain and sauté veggies and meat thoroughly to reduce excess liquids in the bake.
  • Layer fillings and cheese evenly and in thin layers for balanced flavor and even cooking.
  • If cheese browns too quickly during baking, tent the dish with foil to prevent burning.
