Ingredients

Scale

Vegetables and Legumes

  • 3 medium zucchinis, firm and sliced into thin rounds or half-moons
  • 1 can (15 oz) chickpeas, drained and rinsed (or equivalent cooked chickpeas)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Cheese

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Other

  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

  1. Prepare the Vegetables: Wash and slice the zucchinis into thin rounds or half-moons according to your preference. Finely chop the onion and mince the garlic. These preparations will make the sautéing process quick and even.
  2. Sauté Onion, Garlic, and Zucchini: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until fragrant and translucent. Add the zucchini slices and sauté for about 5 to 7 minutes until they are just tender but still firm.
  3. Add Chickpeas and Seasonings: Drain and rinse the chickpeas well, then add them to the skillet with the zucchini mixture. Stir to combine. Season generously with salt, pepper, fresh parsley, and oregano, ensuring the flavors are well incorporated.
  4. Assemble the Bake: Transfer the vegetable and chickpea mixture into a baking dish, spreading evenly. Sprinkle the shredded mozzarella and grated parmesan cheeses over the top. If desired, add breadcrumbs for a crunchy topping.
  5. Bake Until Golden and Bubbly: Preheat your oven to 375°F (190°C). Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted, bubbling, and golden brown on top.

Notes

  • Don’t overcook zucchini during sautéing to keep it slightly firm and avoid sogginess in the bake.
  • Use freshly shredded cheese for better melting and texture compared to pre-packaged shredded cheese.
  • Drain chickpeas thoroughly to prevent excess moisture, which can make the dish watery.
  • Allow the bake to rest for a few minutes after baking to make slicing easier and help flavors meld.
  • For a fresh finish, sprinkle additional fresh herbs like parsley or basil after baking.
