Instructions

  1. Prepare the filling: Melt 2 tablespoons of butter in a large skillet over medium heat. Whisk in 2 tablespoons of flour until smooth and cook for about 1 minute to form a roux. Gradually add 2 cups chicken broth and 1 cup milk or cream while stirring constantly until the mixture thickens into a creamy sauce. Stir in 2 cups shredded cooked chicken, 1 cup frozen mixed vegetables, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon garlic powder, and 1 teaspoon thyme or rosemary. Simmer for 5 minutes to combine flavors.
  2. Make the biscuit topping: In a mixing bowl, combine 2 cups biscuit mix or self-rising flour with 2/3 cup milk and 3 tablespoons melted butter. Stir gently until just combined to form a sticky dough; avoid overmixing to keep the topping light and fluffy.
  3. Assemble and bake: Preheat the oven to 400°F (200°C). Grease a baking dish and transfer the prepared chicken filling into it evenly. Dollop the biscuit dough evenly on top of the filling and spread gently to cover as much as possible without pressing down. Bake for 20–25 minutes, or until the biscuit topping is golden brown and cooked through.
  4. Rest and serve: Remove from the oven and let the Chicken Cobbler rest for about 5 minutes to allow the filling to set slightly. Garnish with chopped fresh parsley or chives and serve with optional hot sauce or sour cream if desired.
