Instructions

  1. Prep the Ingredients: Slice the chicken into thin strips for even, quick cooking. Julienne the carrots, shred the cabbage, and chop the green onions. Prepare the pancit noodles by soaking or boiling until pliable as per package instructions.
  2. Sauté Aromatics and Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and chopped onions, cooking until fragrant and translucent. Add the sliced chicken and sauté until no longer pink and slightly golden at the edges.
  3. Cook the Vegetables: Add carrots, cabbage, and optional green beans or snap peas to the skillet. Stir-fry for a few minutes until the vegetables are tender-crisp, slightly searing them to enhance sweetness and texture.
  4. Add the Noodles and Sauce: Incorporate the prepared noodles into the skillet, gently tossing to combine with the chicken and vegetables. Pour in chicken broth and soy sauce, stirring well to allow the noodles to absorb the flavors. Cook for 3 to 5 minutes until the liquid reduces slightly and noodles are well coated.
  5. Finish with Citrus and Garnish: Turn off the heat and squeeze fresh calamansi or lemon juice over the dish to brighten the flavors. Sprinkle sliced green onions on top as a fresh garnish. Serve immediately.
