Ingredients

Scale

Proteins

  • 1 lb boneless, skinless chicken breast or thighs, thinly sliced

Noodles

  • 2 packages (about 6 oz) fresh or dried ramen noodles

Vegetables

  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 1 carrot, julienned or thinly sliced
  • 3 green onions, sliced

Sauce & Aromatics

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil

Optional Add-ons

  • 1/2 teaspoon chili flakes (optional)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • Fresh lime juice (to taste, for garnish)

Instructions

  1. Prep Your Ingredients: Slice the chicken into thin strips for quick cooking. Chop your chosen vegetables into bite-sized pieces and mince the garlic and ginger so they’re ready to flavor the dish.
  2. Cook the Chicken: Heat a tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken strips with a pinch of salt and cook until browned and cooked through, about 4-5 minutes. Remove from the pan and set aside.
  3. Stir Fry the Vegetables: In the same pan, add a little more oil if needed. Toss in the garlic and ginger and sauté until fragrant, about 30 seconds. Add your vegetables and stir fry for 3-4 minutes until they are crisp-tender but still bright in color.
  4. Cook the Ramen Noodles: Meanwhile, cook your ramen noodles according to package instructions, but be sure to undercook slightly as they will finish cooking in the stir fry. Drain and set aside.
  5. Combine and Finish: Return the cooked chicken to the pan, add the noodles, and drizzle over soy sauce and sesame oil. Toss everything together thoroughly and stir fry for another 2 minutes to marry the flavors and warm through. Add optional chili flakes if desired.

Notes

  • Use high heat to keep vegetables crisp and chicken nicely seared.
  • Do not overcook noodles to avoid mushiness; slight undercooking is ideal.
  • Prep ingredients ahead of time for faster cooking.
  • Add soy sauce gradually and adjust to taste for best balance.
  • Garnish with green onions, sesame seeds, or lime juice for freshness.
