Ingredients

Scale

Main Ingredients

  • 2 Chicken Breasts (pounded thin, about 1/4 inch thick)
  • 1 cup Bread Crumbs (seasoned with paprika, garlic powder, or Italian herbs, optional)
  • 1/2 cup Flour
  • 2 Eggs (beaten)
  • 4 slices Good Quality Bread (crusty like ciabatta or baguette, or soft according to preference)
  • 1/2 cup Fresh Pesto (basil, garlic, pine nuts, Parmesan, olive oil)

Optional Add-ons

  • Fresh Arugula or Spinach (for a peppery, fresh kick)
  • Cheese (Mozzarella or Provolone, sliced for melting)

Cooking Oil

  • Vegetable or Olive Oil (for frying schnitzel)

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thinness of about 1/4 inch to ensure quick, even cooking and tender schnitzel. Lightly season with salt and pepper.
  2. Set Up Your Breading Station: Arrange three shallow bowls: one with flour, one with beaten eggs, and one with seasoned bread crumbs. Coat each piece of chicken first in flour, then dip in the egg, and finally coat thoroughly with bread crumbs.
  3. Fry the Schnitzel: Heat a generous amount of oil in a skillet over medium heat. Fry each schnitzel for about 3-4 minutes per side until golden brown and crispy. Drain on paper towels to remove excess oil.
  4. Toast the Bread: While the schnitzel cooks, lightly toast your bread slices to prevent sogginess and help the sandwich hold up better.
  5. Assemble with Pesto and Extras: Spread a hearty layer of fresh pesto over one side of each toast slice. Layer the schnitzel on top, add optional greens or cheese if desired, then close the sandwich and press gently.

Notes

  • Don’t skip pounding the chicken to an even thickness to ensure quick cooking and avoid dry edges.
  • Season bread crumbs with paprika, garlic powder, or Italian herbs for enhanced flavor.
  • Use fresh pesto, homemade or high-quality store-bought, to maximize flavor.
  • Drain schnitzel on paper towels to keep the sandwich from becoming greasy and soggy.
  • Warm the assembled sandwich slightly before serving to melt cheese and blend flavors.
