Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil, then add the spaghetti noodles. Cook until al dente according to package instructions, about 8-10 minutes. Drain and set aside to prevent mushiness.
  2. Prepare the Chicken: Season chicken breasts or thighs with salt and pepper. Cook in a skillet over medium heat until fully cooked and golden brown, about 5-7 minutes per side. Let rest briefly, then shred with two forks.
  3. Make the Creamy Sauce: In the same skillet, sauté chopped onions and minced garlic until fragrant and translucent. Stir in cream of mushroom soup, cream of chicken soup, and chicken broth, whisking to combine smoothly. Simmer for a few minutes to thicken the sauce, then stir in diced green chilies or bell peppers.
  4. Combine All Ingredients: Add shredded chicken, cooked spaghetti, and half of the shredded cheddar cheese into the sauce. Mix thoroughly to coat the noodles evenly and let the cheese melt into the warm sauce.
  5. Bake or Serve Immediately: For a golden, bubbly top, transfer mixture to a lightly greased baking dish, sprinkle remaining cheese on top, and bake at 350°F (175°C) for about 20 minutes. Alternatively, serve straight from the stove for a quicker meal.
