  • 2 bay leaves
  • 1 teaspoon dried thyme

  • 3 garlic cloves, minced

Instructions

  1. Prepare Your Ingredients: Chop all vegetables into bite-sized pieces and pat the chicken dry to ensure a good sear and flavorful base.
  2. Brown the Chicken: Heat olive oil or butter in a large pot over medium-high heat. Add chicken pieces and brown on all sides to lock in juices and add richness.
  3. Sauté the Aromatics: Remove the browned chicken and set aside. In the same pot, sauté onions, garlic, and celery until softened and fragrant to build deep flavors.
  4. Add Vegetables and Broth: Return chicken to the pot, then add carrots, potatoes, bay leaves, thyme, and enough chicken broth to cover the ingredients. Bring to a gentle boil.
  5. Simmer Until Tender: Reduce heat to low and simmer for 45 minutes to 1 hour, stirring occasionally, until chicken is cooked through and vegetables are tender.
  6. Final Seasoning: Remove bay leaves, season with salt and pepper to taste, and adjust herbs if needed before serving your cozy chicken stew.
