Ingredients

Protein

  • Chicken breast or thighs, thinly sliced (about 1 pound)

Noodles

  • Egg noodles or rice noodles (8 ounces)

Teriyaki Sauce

  • Soy sauce (1/4 cup)
  • Honey or brown sugar (2 tablespoons)
  • Garlic, minced (2 cloves)
  • Fresh ginger, grated (1 tablespoon)
  • Sesame oil (1 teaspoon, plus extra for drizzling)

Garnishes

  • Green onions, sliced (2 stalks)
  • Sesame seeds (1 tablespoon, optional)
  • Chopped cilantro or fresh herbs (optional)

Instructions

  1. Prepare the Sauce: Whisk together soy sauce, honey or brown sugar, minced garlic, grated ginger, and a splash (1 teaspoon) of sesame oil in a small bowl until well combined. This mixture forms the flavorful base of your teriyaki glaze.
  2. Cook the Noodles: Boil the egg or rice noodles according to package instructions until just tender. Drain the noodles and toss them briefly with a tiny drizzle of sesame oil to prevent sticking and add flavor. Set aside.
  3. Sear the Chicken: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the thinly sliced chicken breast or thighs and cook until golden brown and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  4. Combine and Simmer: In the same skillet, pour in the prepared teriyaki sauce. Let it simmer gently for 2-3 minutes until slightly thickened and glossy. Return the cooked chicken to the skillet, coating it thoroughly with the sauce.
  5. Toss Noodles and Finish: Add the cooked noodles to the skillet, gently tossing everything together so each strand is coated in the shiny teriyaki glaze. Warm the mixture through for 1-2 minutes to marry the flavors before serving.

Notes

  • Marinate for more flavor: Let the chicken soak in some of the teriyaki sauce for 15 minutes before cooking to deepen taste.
  • Don’t overcook noodles: Slightly undercook noodles to retain a chewy texture when combined with the sauce.
  • Use fresh aromatics: Fresh garlic and ginger significantly enhance the flavor compared to pre-minced or powdered options.
  • Adjust sweetness: Modify the quantity of honey or brown sugar based on your preferred level of sweetness.
  • Serve immediately: Noodles taste best fresh; reheating may cause them to soften excessively or become soggy.
