Ingredients

Scale

Main Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 crisp apples (such as Granny Smith or Fuji), cored and thinly sliced or shredded
  • 2 cups shredded cabbage
  • 1 cup grated or thinly sliced carrots
  • 1/4 cup thinly sliced red onion

Dressing

  • 1/3 cup Greek yogurt or mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • Salt, to taste
  • Freshly ground black pepper, to taste

Additional Flavorings

  • 2 tablespoons chopped fresh herbs (parsley or cilantro)

Instructions

  1. Prepare the Vegetables and Apples: Wash the apples, then core and thinly slice or shred them. Shred the cabbage finely and grate or thinly slice the carrots. Slice the red onion thinly to ensure it doesn’t overpower the other flavors.
  2. Drain and Rinse Chickpeas: Open the canned chickpeas, drain, and rinse them well under cold water to remove excess salt and create a fresh base for the slaw.
  3. Make the Dressing: In a separate bowl, whisk together Greek yogurt or mayonnaise, lemon juice, honey or maple syrup, salt, and pepper until smooth and creamy.
  4. Combine Everything: Place the prepared apples, cabbage, carrots, red onion, and chickpeas into a large mixing bowl. Pour the dressing over and toss thoroughly to coat all ingredients evenly.
  5. Add Fresh Herbs and Serve: Chop fresh herbs and sprinkle them over the slaw, giving it one final gentle toss. Serve immediately or chill for a bit to blend flavors more deeply.

Notes

  • Use crisp, firm apples like Granny Smith or Fuji to maintain crunch.
  • Start with less dressing and add more if needed to avoid sogginess.
  • Let the slaw chill for 30 minutes to meld flavors perfectly.
  • If adding nuts or seeds, toast them lightly to enhance crunch and aroma.
  • Prepare fresh dressing just before combining to keep veggies crisp and fresh.
