Ingredients

Scale

Protein

  • 500g chicken breast or thighs, sliced into bite-sized pieces

Vegetables and Aromatics

  • 12 bell peppers, sliced into strips
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 green onions, sliced

Sauces and Oils

  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 12 tablespoons chili sauce or 1 fresh chili, finely chopped (adjust to taste)
  • 1 teaspoon sesame oil, plus extra for finishing
  • 2 tablespoons vegetable oil or oil with high smoke point for stir frying

Seasonings

  • Salt and pepper, to taste

Instructions

  1. Prepare the ingredients: Slice the chicken into bite-sized pieces, chop the bell peppers into strips, mince the garlic and ginger, and slice the green onions. Having everything ready in advance ensures a smooth cooking process.
  2. Marinate the chicken: In a bowl, mix the chicken with soy sauce, a splash of sesame oil, and a pinch of salt and pepper. Let it sit for 10 minutes to absorb the flavors and keep the chicken tender during cooking.
  3. Cook the chicken: Heat a wok or large skillet over medium-high heat with vegetable oil. Add the marinated chicken pieces and stir-fry until golden brown and cooked through, about 5 to 7 minutes.
  4. Add aromatics and vegetables: Toss in the minced garlic, ginger, and sliced bell peppers. Stir-fry until the vegetables are slightly tender but still crisp, about 3 minutes.
  5. Toss with chili sauce: Pour in the chili sauce or your chosen spicy element. Stir everything well to evenly coat the chicken and vegetables, cooking for another 1-2 minutes until the sauce thickens and glazes the ingredients.
  6. Finish and garnish: Remove from heat, sprinkle with sliced green onions, and drizzle a little extra sesame oil on top for a fragrant finish before serving.

Notes

  • Use high heat to sear the chicken nicely and keep vegetables crisp.
  • Don’t overcrowd the pan; stir-fry in batches if needed for even cooking.
  • Prepare all ingredients before cooking to avoid overcooking due to the fast pace of stir frying.
  • Adjust chili sauce gradually to control the spice level according to your preference.
  • Use fresh garlic, ginger, and colorful vegetables for best flavor.
