Chocolate Mousse

  • 3 large egg whites

Instructions

  1. Prepare the Cake Base: Preheat the oven to 350°F (175°C). Line a springform pan with parchment paper. In one bowl, whisk together flour, cocoa powder, and sugar. In another, beat egg yolks with melted butter and vanilla extract. Gradually fold dry ingredients into the wet mixture until smooth. In a separate clean bowl, whip the egg whites until stiff peaks form, then gently fold them into the batter. Pour the batter into the pan and bake for 20-25 minutes, or until a toothpick inserted comes out clean with a few moist crumbs. Allow to cool completely.
  2. Make the Chocolate Mousse: Melt the chopped dark chocolate gently over a double boiler or in short microwave bursts, stirring often. In a separate bowl, whip the heavy cream until soft peaks form. Beat the egg yolks with sugar until creamy and pale. Fold the melted chocolate into the yolk mixture.
  3. Whip Egg Whites for Extra Airiness: Whip the egg whites until stiff peaks form. Carefully fold the whipped cream into the chocolate and yolk mixture, then gently fold in the whipped egg whites to create a light, airy mousse.
  4. Assemble and Chill: Pour the mousse evenly over the cooled cake base, smoothing the top with a spatula. Cover the cake with plastic wrap and refrigerate for at least 4 hours or overnight to allow the mousse to set for a perfect sliceable texture.
