Ingredients

Scale

Crust

  • 1 ½ cups crushed chocolate cookies
  • 6 tablespoons melted butter

Strawberry Swirl

  • 1 cup fresh strawberries, pureed

Cheesecake Filling

  • 24 oz (3 packages) cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream

Instructions

  1. Prepare the Crust: Crush the chocolate cookies finely and mix with melted butter until the mixture holds together. Press this evenly into the bottom of a springform pan to form a firm base. Chill in the fridge while preparing the filling.
  2. Make the Strawberry Swirl: Puree fresh strawberries in a blender or food processor until smooth. Strain to remove seeds if desired. Set aside.
  3. Prepare the Cheesecake Filling: Beat softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing gently after each addition to keep the batter silky. Fold in cocoa powder, vanilla extract, and heavy cream to enrich flavor and texture.
  4. Assemble and Swirl: Pour half of the chocolate cheesecake batter over the crust. Spoon dollops of strawberry puree on top, then add the remaining chocolate batter. Use a skewer or knife to gently swirl through both layers, creating a marbled effect.
  5. Bake and Cool: Bake the cheesecake at 325°F (163°C) for about 50-60 minutes, until set but slightly jiggly in the center. Let cool on a wire rack, then refrigerate for several hours or overnight to firm up and develop flavor.

Notes

  • Use room temperature cream cheese and eggs for a smooth, lump-free batter.
  • Mix just until combined to keep the cheesecake dense and creamy.
  • Bake in a water bath to prevent cracking and ensure even baking.
  • Use a gentle swirling technique to preserve distinct strawberry patterns.
  • Refrigerate cheesecake overnight for the best texture and flavor.
  • Store leftovers covered in the refrigerator up to 5 days or freeze wrapped up to 2 months.
  • Use a sharp knife dipped in hot water and wiped clean between slices for smooth cuts.
