Ingredients

Scale

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Add-ins

  • 12 soft caramel candies or caramel bits, chopped or whole (for centers)
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup chopped pecans, toasted

Instructions

  1. Prepare the dough: Combine the dry ingredients—flour, baking soda, and salt—in a medium bowl. In a large separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until fully incorporated. Gradually add the dry ingredients to the wet mixture, mixing until just combined to ensure tender cookies.
  2. Add nuts and chocolate: Gently fold in the toasted chopped pecans and semi-sweet chocolate chips, distributing them evenly throughout the dough to provide bursts of texture and flavor in every bite.
  3. Shape and insert caramel: Take spoonfuls of dough and flatten slightly on a parchment-lined baking sheet. Place a small piece of caramel candy in the center of each and fold more dough around it, sealing the caramel inside to create a gooey pocket.
  4. Bake to perfection: Preheat oven to 350°F (175°C). Bake cookies for 10-12 minutes or until the edges are golden brown but centers remain soft. Allow cookies to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • Use quality soft caramel candies for the best gooey texture inside the cookies.
  • Do not overmix the dough to keep cookies tender and avoid toughness.
  • Toast pecans lightly to enhance flavor and crunch.
  • Seal caramel pieces well inside the dough to prevent leaking during baking.
  • Allow cookies to cool completely before storing to maintain texture and prevent sogginess.
