Instructions

  1. Prep Your Ingredients: Finely chop the onion and garlic, drain and rinse the chickpeas if using canned, and slice the chorizo into bite-sized pieces to prepare for cooking.
  2. Cook the Chorizo: Heat olive oil in a large pot over medium heat. Add the chorizo pieces and cook until they render their fat and develop a nice crisp texture, deepening the stew’s flavor.
  3. Sauté Aromatics: Add the chopped onion and garlic to the pot with the chorizo fat. Cook for about 4-5 minutes until softened and fragrant, forming the flavor base for the stew.
  4. Build the Stew: Stir in smoked paprika and crushed tomatoes, cooking briefly to meld the spices. Add chickpeas and broth, stirring to combine everything before bringing the stew to a gentle simmer.
  5. Simmer Until Perfect: Reduce the heat and simmer the stew gently for 20-30 minutes, allowing flavors to marry and broth to thicken. Adjust seasoning with salt and pepper to taste.
