Ingredients

Scale

Dough Ingredients

  • 2 1/4 teaspoons Active Dry Yeast (1 packet)
  • 1 cup Warm Water (around 110°F / 43°C)
  • 1 tablespoon Sugar
  • 2 cups All-Purpose Flour
  • 1 teaspoon Salt

Boiling Solution

  • 4 cups Water
  • 2 tablespoons Baking Soda

Topping

  • 4 tablespoons Butter, melted
  • 1/2 cup Granulated Sugar
  • 1 tablespoon Ground Cinnamon
  • Optional: Pinch of Nutmeg or Cloves (for spiced cinnamon sugar)

Instructions

  1. Prepare the Dough: Combine warm water, sugar, and yeast in a large mixing bowl. Let it sit for 5 to 10 minutes until frothy. Add flour and salt, then knead until you have a smooth, elastic dough. Cover and let it rise for about 1 hour until doubled in size.
  2. Shape the Pretzel Bites: Once the dough has risen, punch it down and roll it into long ropes about 1 inch thick. Cut the ropes into small bite-sized pieces to form the pretzel bites.
  3. Boil the Pretzel Bites: Bring a large pot of water to a boil and add baking soda. Drop the pretzel bites in batches, boiling for about 30 seconds, then remove using a slotted spoon. This step gives them their iconic pretzel crust.
  4. Bake to Perfection: Place the boiled pretzel bites on a baking sheet lined with parchment paper. Brush each bite with melted butter, then bake at 425°F (220°C) for 12 to 15 minutes or until golden brown.
  5. Add the Cinnamon Sugar Coating: While the bites are still warm, brush with more melted butter and toss them in the cinnamon sugar mixture until well coated. Serve immediately for the best texture and flavor.

Notes

  • Use warm water at about 110°F (43°C) to activate the yeast without killing it.
  • Knead the dough thoroughly to develop gluten for the chewy texture.
  • Do not skip the baking soda water bath, as it creates the classic pretzel crust.
  • Brush the bites with butter and cinnamon sugar while warm to help the coating stick perfectly.
  • Adjust cinnamon sugar ratios to taste but maintain balance between sweetness and spice.
  • Dough can be refrigerated overnight to develop flavor and baked fresh the next day.
  • Store leftover bites in an airtight container at room temperature for up to 2 days.
  • Freeze pretzel bites in a single layer then transfer to freezer bags for up to 3 months.
  • Reheat in oven at 350°F (175°C) for 5-7 minutes; avoid microwaving to prevent sogginess.
