Ingredients

Scale

Filling

  • 1 cup cooked chicken breast, finely diced or shredded
  • 1/2 cup ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh basil or parsley, chopped
  • Salt and pepper, to taste

Pasta Dough

  • Homemade or store-bought pasta sheets, enough to make 20-25 ravioli

Creamy Sauce

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 1 shallot, finely chopped
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Garnishes (optional)

  • Fresh basil leaves
  • Extra grated Parmesan cheese
  • Cracked black pepper
  • Extra virgin olive oil drizzle

Instructions

  1. Prepare the Filling: Finely dice or shred cooked chicken breast. In a bowl, mix the chicken with ricotta cheese, freshly grated Parmesan, chopped herbs, salt, and pepper until well combined but not too runny.
  2. Roll Out the Pasta Dough: If using homemade dough, divide into manageable pieces and roll out on a floured surface as thin as possible, aiming for translucent sheets that are sturdy enough to hold filling. Skip this step if using store-bought sheets.
  3. Assemble the Ravioli: Lay one pasta sheet on your work surface. Spoon small dollops of the chicken filling evenly spaced apart. Fold the second sheet over and gently press around each mound to seal. Use a ravioli cutter or sharp knife to cut and separate individual ravioli. Press edges firmly, sealing with water if needed to prevent leaks.
  4. Cook the Ravioli: Bring a large pot of salted water to a gentle boil. Cook ravioli in batches for 3-4 minutes until they float to the surface, indicating they are cooked al dente. Avoid overcooking to keep pasta tender and intact.
  5. Prepare the Creamy Sauce: While the ravioli cook, melt butter with olive oil in a skillet over medium heat. Sauté the chopped garlic and shallots until fragrant. Add heavy cream and Parmesan cheese, stirring continuously until the sauce thickens slightly into a silky coating.
  6. Combine and Serve: Gently transfer cooked ravioli into the skillet with the cream sauce and coat evenly. Garnish with fresh herbs, extra Parmesan, cracked black pepper, and a drizzle of olive oil. Serve immediately for the best experience.

Notes

  • Use room temperature ingredients for smoother mixing and even cooking.
  • Don’t overfill ravioli to prevent bursting during cooking.
  • Seal edges thoroughly using a little water to avoid leaks.
  • Cook ravioli gently in simmering water to keep them intact.
  • Make extra sauce to generously coat the ravioli or drizzle at serving.
