Ingredients

Scale

Chicken

  • 4 skinless, boneless chicken breasts

Citrus

  • 1 lemon, zest and juice

Herbs and Aromatics

  • 2 garlic cloves, finely chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary, chopped

Liquids

  • 1 cup heavy cream or half-and-half
  • 1/2 cup chicken broth

Fats and Seasoning

  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. Prepare Your Ingredients: Season the chicken breasts generously with salt and pepper. Zest and juice the lemon, finely chop the garlic cloves, and chop the fresh herbs. Set everything aside ready for cooking.
  2. Cook the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and fully cooked. Remove from the pan and set aside, keeping the juices in the skillet.
  3. Build the Sauce: Using the same skillet, add chopped garlic and sauté until fragrant, about 30 seconds. Pour in the chicken broth and lemon juice, scraping up browned bits from the pan. Let the mixture reduce slightly, about 3 minutes.
  4. Add Cream and Herbs: Stir in the heavy cream and the chopped fresh herbs. Simmer gently until the sauce has thickened to a luscious consistency. Taste and adjust seasoning with salt, pepper, or additional lemon juice as desired.
  5. Finish and Serve: Return the cooked chicken to the skillet, spoon the creamy sauce over the top, and heat through for 1-2 minutes. Serve hot with your preferred side dishes.

Notes

  • Pound chicken breasts to even thickness to ensure uniform cooking and juicy results.
  • Remove chicken from heat as soon as it reaches 165°F to avoid drying out.
  • Use fresh herbs for vibrant flavor and aroma instead of dried herbs.
  • Let cooked chicken rest a few minutes before slicing to lock in the juices.
  • If the sauce becomes too thick, thin it with a splash of chicken broth or water.
