Perfect for busy weeknights or last-minute cravings, this dish is customizable and loved by both kids and adults alike.

Ingredients

Scale

Pasta

  • 2 cups elbow macaroni

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or gluten-free flour for gluten-free version)
  • 2 cups milk (whole milk preferred)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon mustard powder (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until just al dente, about 7 minutes. Drain and set aside, avoiding overcooking to maintain the perfect bite against the rich sauce.
  2. Make the Roux: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly to form a smooth roux that will thicken the cheese sauce without graininess.
  3. Add Milk and Thicken: Slowly pour in the milk while whisking constantly to prevent lumps. Continue cooking and stirring until the sauce thickens and gently bubbles, usually about 5 minutes.
  4. Melt in the Cheese: Lower the heat and add the shredded sharp cheddar cheese. Stir continuously until fully melted and the sauce is smooth and creamy. Season with salt, pepper, and optional mustard powder.
  5. Combine Pasta and Sauce: Return the cooked macaroni to the pot and stir well to coat each piece thoroughly with the luscious cheese sauce. Serve immediately for the creamiest experience.

Notes

  • Use freshly shredded cheese for optimal melting; pre-shredded often contains anti-caking agents.
  • Don’t skip making the roux—it ensures a smooth, non-watery sauce.
  • Cook over moderate heat to prevent cheese from separating or becoming grainy.
  • Reserve some pasta water to adjust the sauce consistency if needed.
  • Season pasta water and cheese sauce separately for balanced flavor.
