Ingredients

Scale

Main Ingredients

  • 23 lbs fresh ripe tomatoes, halved
  • 2 whole garlic bulbs
  • 1 medium onion, chopped
  • 4 cups vegetable or chicken broth
  • 1/2 to 1 cup heavy cream or coconut milk
  • 23 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Herbs and Seasonings

  • Fresh basil leaves or fresh thyme (quantity as preferred)
  • Pinch of red pepper flakes or splash of hot sauce (for spicy variation)
  • Rosemary, oregano, or bay leaves (optional for herb infusion)
  • Roasted red bell peppers (for smoky-sweet twist, optional)
  • Grated Parmesan or cream cheese (for cheesy finish, optional)

Instructions

  1. Roast the Garlic and Tomatoes: Preheat your oven to 400°F (200°C). Slice the tops off whole garlic bulbs to expose the cloves, drizzle with olive oil, and wrap in foil. On a baking sheet, toss halved tomatoes with olive oil, salt, and pepper. Roast the garlic and tomatoes for 30-40 minutes until soft, caramelized, and bursting with flavor.
  2. Sauté the Onion: While your garlic and tomatoes roast, heat olive oil in a large pot over medium heat. Add chopped onion and cook gently until translucent and fragrant, about 5-7 minutes. This step builds a sweet, savory foundation for the soup.
  3. Combine and Simmer: Squeeze the roasted garlic cloves out of their skins and add them to the pot along with the roasted tomatoes. Pour in your broth and bring the mixture to a gentle simmer for 15-20 minutes to deepen the flavors further.
  4. Blend Until Smooth: Carefully transfer the soup in batches to a blender or use an immersion blender directly in the pot to puree until silky smooth. This is where the magic happens, turning your soup into that perfect creamy consistency.
  5. Add Cream and Season: Return the blended soup to the pot and stir in your cream or coconut milk. Heat gently but do not boil, then taste and adjust salt and pepper as needed for a perfectly balanced bowl.

Notes

  • Roast low and slow to bring out the natural sweetness of garlic and mellow its sharpness.
  • Use ripe, in-season tomatoes for the best flavor and vibrant color.
  • Blend the soup in batches to achieve a smooth texture and avoid splatters.
  • Reserve and include any juices left from roasting to intensify the soup’s flavor.
  • Heat gently after adding cream to prevent curdling and maintain silky texture.
