Ingredients

Scale

Protein

  • 2 cups shredded rotisserie chicken

Vegetables & Aromatics

  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp fresh thyme or 2 tbsp fresh parsley, chopped

Liquids

  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half

Fats & Oils

  • 2 tbsp butter
  • 1 tbsp olive oil

Thickening Agent

  • 2 tbsp all-purpose flour (or cornstarch for gluten-free)

Seasonings

  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Mushrooms and Aromatics: Heat 2 tablespoons of butter and a drizzle of olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes. Then add the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and softened, releasing their aroma.
  2. Create the Soup Base: Sprinkle 2 tablespoons of flour over the mushroom mixture and stir constantly to make a roux. Gradually whisk in 4 cups of chicken broth to avoid lumps. Bring the mixture to a gentle simmer, allowing it to thicken into a luscious base.
  3. Add the Chicken and Cream: Stir in 2 cups of shredded rotisserie chicken and pour in 1 cup of heavy cream or half-and-half. Warm through while stirring, letting the flavors meld and the soup thicken to a velvety consistency.
  4. Season and Finish: Season the soup with salt, freshly ground black pepper, and 2 teaspoons of fresh thyme or 2 tablespoons of fresh parsley. Adjust seasoning as needed. Simmer for a few more minutes to marry all the flavors before serving.

Notes

  • Use fresh mushrooms for the best texture and flavor.
  • Browning the mushrooms and aromatics unlocks deeper flavor complexity.
  • Shred the chicken finely for even distribution.
  • Adjust the thickening agent amount to control soup consistency.
  • Add fresh herbs at the end for vibrant taste.
  • For dairy-free, substitute heavy cream with coconut or cashew cream.
  • For gluten-free, use cornstarch or arrowroot instead of flour.
  • Optional: Add a pinch of cayenne or smoked paprika for subtle heat.
  • Optional: Include extra vegetables like carrots, celery, or spinach for added nutrition.
