Ingredients

Scale

Salmon

  • 4 salmon fillets (skin-on or skinless, about 6 oz each)

Cooking fats

  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme)

Vegetables

  • 2 cups fresh spinach

Seasoning

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare and Season the Salmon: Pat the salmon fillets dry with a paper towel and season generously with salt, pepper, and dried Italian herbs or your preferred herbs to create a flavorful crust when seared.
  2. Sear the Salmon: Heat olive oil and butter in a large skillet over medium-high heat. Place the salmon skin-side down if applicable, and sear for 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
  3. Sauté Garlic and Sun-Dried Tomatoes: Reduce the heat to medium. In the same pan, add the minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant, stirring frequently to prevent burning.
  4. Create the Creamy Tuscan Sauce: Pour in the heavy cream and stir well, scraping the skillet bits off the bottom for extra flavor. Add grated Parmesan cheese and dried Italian herbs. Simmer gently until the sauce thickens slightly.
  5. Add Spinach: Fold in fresh spinach and cook until just wilted, preserving its bright color and tender texture.
  6. Return Salmon to the Sauce: Place the salmon back into the pan and spoon the creamy sauce over the fillets. Let everything meld together for about a minute before serving hot.

Notes

  • Pat salmon dry to ensure a perfect sear and prevent sogginess.
  • Do not overcook the salmon; remove from heat when it flakes easily but remains moist.
  • Use quality sun-dried tomatoes for the most intense flavor.
  • Simmer the sauce gently to avoid curdling the cream.
  • Add fresh herbs like basil or parsley just before serving to enhance aroma and freshness.
