Instructions

  1. Prepare the sushi rice: Cook sushi rice according to the package instructions. While still warm, season it with rice vinegar. Spread the rice evenly on a flat surface and let it cool until it’s sticky but cool enough to handle.
  2. Form the rice squares: With wet hands or using a mold, shape the sushi rice into small compact squares or rectangles, roughly bite-sized for easy serving and eating.
  3. Fry the rice bases: Heat a neutral oil in a non-stick pan over medium heat. Fry the rice squares until golden and crispy on the outside, turning carefully to crisp all sides evenly. Remove and drain on paper towels.
  4. Prepare the toppings: Slice fresh fish or seafood thinly, and prepare any vegetables or garnishes. Make sure everything is fresh and dry to avoid sogginess.
  5. Assemble the bites: Place your chosen topping on each crispy rice square. Drizzle with soy sauce or spicy mayo, then sprinkle with sesame seeds, scallions, or other garnishes.
  6. Serve and enjoy: Arrange the crispy rice sushi bites on a platter and serve immediately with additional dipping sauces. Best enjoyed while the rice remains crisp.
