  • 2 cloves garlic, finely chopped
  • 2 tablespoons fresh parsley, chopped (or dill, cilantro, basil)

  • Olive oil or vegetable oil, enough to cover the pan bottom for frying

Instructions

  1. Prepare the Vegetables: Wash and grate zucchini, carrots, and bell peppers finely. Place the grated vegetables in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible to ensure crispy fritters.
  2. Mix the Batter: In a large mixing bowl, combine the grated vegetables with flour, beaten eggs, finely chopped onion and garlic, fresh parsley, salt, pepper, and optional spices like cumin or paprika. Stir gently until well incorporated but avoid making the mixture too wet.
  3. Heat the Pan: Place a non-stick skillet over medium heat and add enough olive oil or vegetable oil to cover the bottom generously. This helps in frying the fritters evenly and developing a crispy crust.
  4. Fry the Fritters: Using a spoon, drop heaping amounts of the batter onto the hot pan. Flatten each fritter lightly with the back of the spoon to form a patty. Fry for 3 to 4 minutes on each side or until they turn golden brown and crispy.
  5. Drain and Serve: Remove the cooked fritters from the pan and place them on a plate lined with paper towels to absorb excess oil. Serve warm with your preferred dipping sauces or garnishes like sour cream, Greek yogurt, or fresh herbs.
