Ingredients

Scale

Main Ingredients

  • 3 whole fresh ripe oranges (including peel)
  • 2 cups ground almonds or almond flour
  • 4 large eggs
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon orange zest

Instructions

  1. Prepare Your Oranges: Wash the oranges thoroughly. Place them whole in a pot of boiling water and simmer for about an hour to soften the peel and reduce bitterness. Once cooled, cut them up, remove any seeds, and blend into a smooth puree.
  2. Mix Dry Ingredients: In a large bowl, combine the ground almonds, baking powder, and sugar to create the dry base for the cake.
  3. Add Eggs and Orange Puree: Lightly beat the eggs, then add them along with the orange puree to the dry ingredients. Stir the mixture until fully combined into a smooth batter.
  4. Bake the Cake: Pour the batter into a greased or lined round cake pan. Bake at 350°F (175°C) for about 45-50 minutes, or until the top is golden and a toothpick inserted comes out mostly clean with a few moist crumbs.
  5. Cool and Serve: Allow the cake to cool completely before removing it from the pan to set the texture, making slicing clean and effortless.

Notes

  • Use organic oranges to avoid pesticide residues on the peel.
  • Boil the oranges to reduce any bitterness and soften the skin for a smoother puree.
  • Measure the ground almonds carefully to avoid a dry cake.
  • Monitor baking time closely near the end to prevent overbaking.
  • Let the cake cool fully to achieve the signature moist and fudgy texture.
