Instructions

  3. Sweeten and Flavor: In a bowl, combine the strawberry puree with 1/4 cup sugar and a teaspoon of fresh lemon juice. Stir in the dissolved gelatin and 1/2 teaspoon vanilla extract, mixing well to incorporate evenly.
  4. Whip the Cream: In a separate chilled bowl, whip 1 cup of heavy cream until soft peaks form. The cream should be light and airy but still hold shape when lifted with a whisk or spatula.
  5. Fold Cream into Strawberry Mixture: Gently fold the whipped cream into the strawberry mixture using a spatula. Do this carefully to maintain the airiness without deflating the mousse. Fold until fully combined and homogenous.
