Ingredients

Scale

Steak and Potatoes

  • 1 pound sirloin or ribeye steak, cut into bite-sized cubes
  • 1 pound baby Yukon Gold or red potatoes, washed and halved
  • 2 tablespoons olive oil, divided
  • Salt, to taste
  • Freshly ground black pepper, to taste

Garlic Butter Sauce

  • 4 tablespoons unsalted butter
  • 34 cloves garlic, minced
  • 2 tablespoons fresh parsley or thyme, chopped

Optional Variations and Garnishes

  • Crushed red pepper flakes or cayenne pepper, to taste (for a spicy kick)
  • Grated Parmesan cheese, for sprinkling
  • Lemon juice, a light squeeze before serving

Instructions

  1. Prepare the Potatoes: Wash and halve the baby potatoes, then toss them with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet and roast in a preheated oven at 425°F (220°C) for about 20 minutes, until golden and crispy outside and fluffy inside.
  2. Cut and Season the Steak: While potatoes roast, cut the steak into bite-sized cubes. Season generously with salt and freshly ground black pepper to enhance the beef’s natural flavors.
  3. Sear the Steak Bites: Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer without overcrowding and sear each side quickly, about 2-3 minutes total, to develop a caramelized crust while locking in juices. Cook in batches if necessary.
  4. Make the Garlic Butter Sauce: Reduce heat to medium. Add butter and minced garlic to the skillet with the steak. Stir gently as the butter melts and the garlic softens, infusing the sauce with rich aromatic flavor.
  5. Combine Steak and Potatoes: Add the roasted potatoes back into the skillet. Toss gently to coat everything evenly in the garlic butter sauce, letting the flavors meld and allowing the sauce to crisp the potatoes lightly.
  6. Garnish and Serve: Sprinkle chopped fresh parsley or thyme over the dish for color and fresh herbaceous notes. Optionally, add a light squeeze of lemon juice and sprinkle grated Parmesan cheese if desired. Serve immediately while piping hot.

Notes

  • Use room temperature steak for even cooking and better texture.
  • Don’t overcrowd the pan when searing steak bites; cook in batches if needed.
  • Choose small, uniform baby potatoes to ensure even roasting.
  • Use fresh minced garlic rather than garlic powder for vibrant flavor.
  • Rest the cooked steak bites 2-3 minutes off heat before combining with potatoes to retain juiciness.
  • Reheat gently in a skillet with a bit of butter or olive oil; avoid microwaving to preserve texture.
