Instructions

  1. Prepare the Dough: Mix masa harina with warm water and salt in a bowl until a soft, workable dough forms. The dough should be moist but not sticky so it can be shaped easily.
  2. Shape the Gorditas: Divide the dough into equal portions and flatten each into a thick disc about half an inch thick. Cover the dough discs with a damp towel to keep them from drying out.
  3. Cook the Dough: Heat a skillet over medium heat and cook each dough disc for 2-3 minutes per side until lightly golden and cooked through. This partial cooking sets the dough before filling.
  4. Slice and Fill: Carefully slice an opening on the side of each gordita and stuff with your desired filling, such as seasoned beef, beans, or cheese. Avoid overfilling to keep them intact.
  5. Final Fry: Heat oil in a skillet over medium heat and fry each stuffed gordita until crispy and golden brown on both sides. This seals the edges and creates a delicious crunch.

  • Use fresh, unopened masa harina for better dough consistency and flavor.
  • Keep dough covered with a damp cloth to prevent drying out while working.
  • Do not overstuff to avoid breaking the gorditas.
