  • 1 medium red onion, sliced into 1/2 inch wedges

Seasoning & Oil

  • 2 tablespoons olive oil
  • 1 tablespoon taco seasoning (blend of cumin, chili powder, paprika, garlic powder, salt, and pepper)

For Serving

  • 8 small corn or flour tortillas
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for squeezing
  • Optional toppings: avocado slices, vegan sour cream, sliced jalapeños, crumbled queso fresco or plant-based cheese, grilled tofu, black beans, tempeh, crema, chopped radishes, chili powder

Instructions

  1. Prepare the Vegetables: Wash and slice all vegetables into evenly sized pieces, about 1/2 inch thick, to ensure they cook uniformly on the grill. Toss the sliced veggies with olive oil and taco seasoning until all pieces are well coated for maximum flavor.
  2. Heat the Grill: Preheat your grill to medium-high heat, ensuring it’s hot enough to sear the vegetables, locking in juices and creating appealing grill marks.
  3. Grill the Vegetables: Place the seasoned vegetables directly on the grill grates or in a grill basket if pieces are small. Grill for about 4-5 minutes per side until tender and beautifully charred.
  4. Warm the Tortillas: While the vegetables finish grilling, lightly toast the tortillas on the grill for 30 seconds per side to make them pliable and aromatic.
  5. Assemble the Tacos: Layer the grilled vegetables on each warmed tortilla. Garnish with chopped cilantro and a squeeze of fresh lime juice. Add any optional toppings like avocado slices or vegan sour cream to your liking.
