Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining the pasta.
  2. Sauté the Shrimp: Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Create the Garlic and Lemon Sauce: In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds to 1 minute, being careful not to burn it. Stir in the fresh lemon juice and lemon zest, then add the remaining tablespoon of butter to create a silky sauce.
  4. Combine Pasta and Shrimp: Return the cooked shrimp to the skillet along with the drained pasta. Toss everything gently, adding reserved pasta water as needed to loosen the sauce. Season with additional salt, pepper, and red pepper flakes if desired.
  5. Finish with Fresh Herbs: Turn off the heat and sprinkle chopped fresh parsley over the pasta. Toss once more to combine and serve immediately.
