Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, then add your pasta and cook according to package instructions until al dente. Drain and set aside, saving a little pasta water to loosen the sauce if needed.
  2. Make the Cheese Sauce Base: Melt butter in a saucepan over medium heat, then whisk in the flour to create a roux. Cook for 1-2 minutes until the mixture is slightly golden and bubbling but not browned.
  3. Add Milk and Seasonings: Slowly whisk in the milk or cream, stirring constantly to avoid lumps. Bring to a gentle simmer, then stir in salt, pepper, and mustard powder or paprika to enhance the flavor.
  4. Melt the Cheese: Lower the heat and gradually add shredded cheese, stirring continuously until smooth and fully melted. Keep the heat low to prevent cheese from separating or becoming grainy.
  5. Combine Pasta and Sauce: Pour the cheese sauce over the cooked pasta and stir thoroughly to coat each piece. If the sauce feels too thick, add a splash of reserved pasta water to loosen it.
