Scale

Primary Ingredients

  • 23 Fresh lemons (zested and juiced)
  • 1 cup Granulated sugar
  • 1 cup All-purpose flour (or gluten-free blend for gluten-free version)
  • 1 1/2 tsp Baking powder
  • 1 cup Milk (or almond/oat milk for dairy-free)
  • 1 tsp Vanilla extract
  • 3 tbsp Butter (for dotting on top and greasing the dish, use vegan butter for dairy-free option)

Instructions

  1. Prepare Your Ingredients: Zest and juice the fresh lemons. Measure out sugar, flour, baking powder, and milk. Preheat your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, and baking powder until well combined.
  3. Combine Wet Ingredients: Add lemon zest, lemon juice, milk, and vanilla extract to the dry mixture. Stir gently until smooth with no lumps, being careful not to overmix.
  4. Pour Batter into Baking Dish: Grease an 8×8-inch baking dish with butter or non-stick spray. Pour the lemon batter evenly into the dish. Dot the top with small pieces of butter.
  5. Bake Until Golden: Bake for 35 to 40 minutes until the crust is golden brown and a toothpick inserted in the center comes out clean. The lemon filling will bubble underneath.
  6. Cool and Serve: Allow the cobbler to cool slightly so the filling sets while keeping the crust tender. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Use fresh lemons for the best bright and natural lemon flavor.
  • Do not overmix the batter to maintain a light, fluffy texture.
  • Adding butter pieces on top before baking creates a crisp, golden crust.
  • Ensure the oven is fully preheated for even baking and good rise.
  • Allow the cobbler to rest a bit after baking to let the filling thicken for perfect spoonfuls.
