Ingredients

Scale

Vegetables

  • 45 medium fresh carrots, peeled and cut into sticks or rounds

Legumes

  • 1 can (15 oz) chickpeas, rinsed and drained

Glaze & Seasonings

  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper (adjust to taste)

Optional Garnishes

  • Fresh parsley or thyme, chopped
  • Lemon juice (for a squeeze before serving)

Instructions

  1. Prep Your Ingredients: Preheat your oven to 400°F (200°C). Peel and cut the carrots into uniform sticks or rounds to ensure even roasting. Rinse and drain your chickpeas thoroughly to remove excess moisture for better crisping.
  2. Mix the Glaze: In a large bowl, whisk together the maple syrup, olive oil, garlic powder, smoked paprika, salt, and pepper until well combined. This glaze will coat the vegetables and chickpeas, infusing every bite with rich flavor.
  3. Toss Carrots and Chickpeas: Add the chopped carrots and chickpeas into the bowl with the glaze. Toss thoroughly so that each piece is evenly covered in the maple mixture, ensuring caramelization during roasting.
  4. Roast to Perfection: Spread the coated carrots and chickpeas in a single layer on a rimmed baking sheet lined with parchment paper. Roast for 25-30 minutes, stirring halfway through, until carrots are tender and chickpeas are crispy and golden.
  5. Garnish and Serve: Remove from oven and let cool for a few minutes. Sprinkle fresh herbs like parsley or thyme before serving to add a fresh pop of color and flavor. Optionally, add a squeeze of lemon juice to brighten the dish.

Notes

  • Cut carrots evenly to ensure they roast at the same rate for perfect texture.
  • Pat chickpeas dry as much as possible to help them crisp up better during roasting.
  • Use parchment paper on your baking sheet to prevent sticking and ease cleanup.
  • Do not overcrowd the baking sheet to allow proper air circulation for crispiness.
  • Adjust the sweetness by tasting and tweaking the amount of maple syrup in the glaze before roasting.
