Instructions

  1. Prep and Season the Chicken: Pat the chicken breasts dry with paper towels to ensure a good sear. Season both sides generously with salt, pepper, and Italian seasoning or fresh herbs to build a flavorful base.
  2. Sear the Chicken: Heat olive oil or butter in a skillet over medium-high heat. Place the chicken breasts in the skillet and sear for about 5 minutes on each side until golden brown but not fully cooked. Remove the chicken and set aside.
  3. Create the Sauce: In the same skillet, add a little more oil or butter if needed and sauté the minced garlic until fragrant, about 30 seconds. Stir in chopped sun-dried tomatoes. Pour in the chicken broth to deglaze the pan, scraping up browned bits. Reduce the broth slightly, then add heavy cream and grated Parmesan cheese, stirring constantly until the sauce becomes silky and creamy.
  4. Simmer the Chicken in Sauce: Return the chicken breasts to the skillet, spoon some sauce over them, lower the heat, and simmer gently for 5-7 minutes, or until the chicken is cooked through and the sauce thickens to your liking.
  5. Finish and Serve: Sprinkle fresh herbs on top if desired, adjust seasoning with salt and pepper, and serve immediately with your favorite sides, spooning extra sauce over the chicken for maximum flavor.
