Instructions

  1. Cook the Rice: Prepare rice according to package instructions, preferably cooking it in chicken broth for added flavor. Once cooked, stir in fresh lime juice and chopped cilantro to brighten the taste.
  2. Season and Cook the Chicken: Dice or shred the chicken, then toss with chili powder, cumin, garlic powder, salt, and pepper. Heat oil in a pan over medium-high heat and sauté the chicken until fully cooked and golden brown on the edges for maximum flavor.
  3. Prepare the Aromatics: In the same pan, add diced onions and minced garlic. Cook for 2-3 minutes until softened and fragrant. Then, return the cooked chicken to the pan and mix well to combine flavors.
  4. Combine Chicken and Rice: Fold the chicken and aromatic mixture into the cooked rice, mixing everything evenly and warming through so the spices meld beautifully.
  5. Assemble Your Tacos: Warm the tortillas on a dry skillet or over an open flame for a few seconds to make them pliable. Spoon the chicken and rice filling onto each tortilla and garnish with desired toppings like avocado slices, salsa, sour cream, or shredded cheese.
