Cheesecake Filling

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Prepare the Crust: Crush graham crackers finely and mix with melted butter. Press this mixture firmly into the base of a mini muffin tin or small ramekins to form the crust foundations.
  2. Whip the Cheesecake Filling: Beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in heavy cream and vanilla extract until the batter is silky and homogenous.
  3. Bake the Cheesecakes: Pour the cheesecake batter carefully over the crusts, filling nearly to the top. Place the filled tins in a water bath and bake at 325°F (163°C) for about 20-25 minutes, or until set but slightly jiggly in the center.
  4. Chill Completely: Remove from oven and let cool to room temperature. Refrigerate the mini cheesecakes for at least 4 hours or overnight to develop flavors and set the texture.
  5. Caramelize the Tops: Evenly sprinkle granulated sugar on top of the chilled cheesecakes. Using a kitchen torch, melt and caramelize the sugar until a crisp, golden crust forms. Alternatively, place under a hot broiler for 1-2 minutes watching closely to avoid burning.
