Mississippi Pot Roast

Mississippi Pot Roast

Mississippi Pot Roast is a comforting slow-cooked beef dish featuring tender chuck roast simmered with ranch seasoning, au jus gravy mix, butter, and tangy pepperoncini peppers. This recipe yields juicy, flavorful meat perfect for family dinners or gatherings, with minimal prep and an irresistible, rich sauce.

Ingredients

Scale

Main Ingredients

  • 3 to 4-pound chuck roast (bone-in or boneless)
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 packet au jus gravy mix (about 1 ounce)
  • 4 tablespoons unsalted butter
  • 5 to 7 pepperoncini peppers, whole, with some juice
  • 1 cup beef broth or water

Instructions

  1. Prep the Roast: Pat the chuck roast dry with paper towels to remove excess moisture. Optionally, sear the roast in a hot skillet for a few minutes on each side for added caramelization. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over all sides of the roast to ensure the flavors penetrate.
  2. Layer Ingredients in the Slow Cooker: Place the seasoned roast in the slow cooker. Pour the beef broth or water around the edges carefully, making sure not to wash away the seasoning. Scatter the pepperoncini peppers evenly over the top of the roast. Dot the roast with chunks of butter to melt down and create a rich, silky sauce.
  3. Cook Low and Slow: Cover the slow cooker with the lid and cook on low for about 8 hours, or on high for 4 to 5 hours. This slow cooking process breaks down the tough connective tissue, resulting in tender, shreddable beef infused with the bold seasoning and tang of the peppers.
  4. Shred and Serve: Remove the finished roast from the slow cooker and use two forks to shred the meat. Return the shredded beef to the slow cooker and mix thoroughly with the juices and pepperoncini for a moist, flavorful dish. Serve with your choice of sides or use in sandwiches and tacos.

Notes

  • Trim excess fat from the roast to prevent a greasy sauce.
  • Searing the roast before slow cooking is optional but adds extra flavor.
  • Keep the slow cooker lid closed during cooking to retain moisture and heat.
  • Adjust the number of pepperoncini peppers to your desired level of tanginess and mild heat.
  • Use high-quality unsalted butter for a richer sauce.
